A First Birthday Party!

Little man had his first birthday party a little early this last weekend. (He won't actually be one for two more weeks). He had tons of fun I think. Even though he was a little intimidated by all the people at first and he cried when we gave him his cupcake to eat, silly boy. He really loved the truck that he got though!

We didn't do anything fancy with decorations, but I did spend a lot of time decorating his cake. You can see how to make the marshmallow fondant I used in this post. Next time I make a cake I'm going to try using buttercream fondant instead of marshmallow and see if its any easier to work with.

I can't believe its been a whole year already. It's amazing how much he has changed in only one year. It's so fun watching him grow up! I love my handsome little man so much!

Today is the only day we don't have to do anything, yay for a lazy Wednesday! Maybe I can get some projects done...

Wordless Wednesday: This Past Year

Since little man is just about to turn one, I thought it would be a good idea to post some old pictures from when he was first born. He was so cute and tiny back then!

Here he is in the hospital with me, since I had to stay there 9 days he was over a week old already.

This is my favorite! His grumpy face is so hilarious. He was about 2 weeks old here.

Little man and I were wearing our MN Twins shirts in this picture. He was almost 2 months old. 

And here he is now, almost one year old and such a handsome little boy!

Wordless Wednedsay: First Time In the Grass

Today was another beautiful day outside. Since the yard had finally dried up we went down to play in the grass. This was little man's first time experiencing this weird stuff and he wasn't a big fan.

 

 

 

 

He was much happier when we went back up on the deck to play instead.

Chicken Crescent Roll Casserole

As I was planning my menu for the week, I remembered I had some leftover chicken from when I made the Cheesy Chicken and Wild Rice Casserole. So I looked around for something with chicken in it that I haven't tried yet. I found this recipe on tastebook.com and decided to try it out today because it looked tasty.

It was very easy to make, didn't take much time at all. It also tasted delicious! Everyone loved it. I would recommend it if you're looking for a simple, quick dinner to make.

Over the weekend I ended up getting my lovely Nikon 1 camera as an extremely early birthday/Christmas gift. We wanted to have it to use this summer for little man's first birthday and for when the two peanuts get here. So I am very excited to be able to work on my photography skills and take some (hopefully) better pictures!

Now on to the recipe:

CHICKEN CRESCENT ROLL CASSEROLE

(2) 8 ounce cans refrigerated crescent dinner rolls
10 3/4 ounce can cream of chicken soup
3/4 cup grated cheddar cheese
1/2 cup whipping cream

FILLING

4 ounces cream cheese, softened
4 tablespoons butter, softened
1/2 teaspoon garlic powder
1/3 cup onion, finely chopped
2 large cooked chicken breasts, finely chopped (about 2 cups)
3/4 cup grated cheddar cheese
salt and pepper to taste
2 tablespoons whipping cream

1-2 cups grated cheddar cheese (for topping)

1. Preheat oven to 350 and grease 9x13 pan.

2. In a saucepan, mix whipping cream, 3/4 cup cheddar cheese and undiluted chicken soup with black pepper to taste. Heat just until the cheese melts (do not boil).

3. For the filling - in a bowl, mix the soft cream cheese with the butter until smooth, then add garlic powder. Add in the chopped chicken, onion and cheddar cheese; mix well. Add in 2 tablespoons whipping cream; mix to combine. (If the mixture seems too dry, add a little more). Season with salt and pepper to taste.

4. Unroll the crescent rolls. Place 1 heaping tablespoon of chicken mixture on top of each crescent triangle, then roll up starting at the thicker end.

5. Drizzle a small amount of soup mixture on the bottom of the 9x13 pan. Place the crescent rolls seam-side down on top of the soup mixture in the pan. Drizzle the remaining sauce on top and sprinkle with 1-2 cups of grated cheddar cheese.

6. Bake for about 30 minutes.

a step in the right direction

I was so excited this morning because little man had slept the entire night without waking up. This is very unusual for him even though he is already 10 1/2 months old. I hope very much that this is not just a one time thing. We will find out tonight I guess. He really needs to start doing this regularly before the twins get here.

The weather has been so strange and chilly this week that we haven't been able to go outside. Last week little man got to play out on the deck in the sun for the first time and he loved it. It's supposed to be nice again Monday and Tuesday so we will be able to spend more time out there.

Right now the only camera I use is the one on my iPhone. Which does take very good pictures. Probably better than my very old digital point and shoot camera and maybe even better than my fairly old DSLR. Sadly that camera is out of commission because I have misplaced the charging cord for it.

I'm hoping to get a Nikon 1 digital camera system sometime in the near future. Maybe even before the babies arrive, since I know I will be taking tons of pictures of them. For now I use an app on my iPhone called Camera+  which seems to work very nicely. It has touch exposure and focus which you can set separately from each other and a digital zoom. It also has some pretty nice editing features so I don't even have to use a separate app for that anymore. It was definitely worth the $0.99 I spent.
